Uleiul de floarea soarelui – prieten sau dusman?

In bucataria romaneasca am folosit uleiul de floarea soarelui de foarte multe generatii iar toata tara este plina de plantatii de floarea soarelui. Il folosim atat in salate cat si la prajit, face parte din traditia noastra, iar pe deasupra mai si este ieftin. Insa este el indicat pentru sanatatea noastra? Studiile moderne par a contrazice acest lucru.

Uleiul de floarea soarelui este un ulei vegetal polinesaturat (alaturi de uleiul de porumb, uleiul de soia si uleiul de arahide) care contine o cantitate mare de acid linoleic. Acesta este un acid gras esential omega-6 pe care organismul il transforma in acid arahidonic, cunoscut pentru faptul ca favorizeaza aparitia inflamatiilor. De cealalta parte, acizii grasi esentiali omega-3 sunt cunoscuti pentru efectele lor antiinflamatorii.

Se recomanda un echilibru intre consumul de omega-3 si omega-6, insa in societatea moderna actuala, omega-6 se regaseste in cantitati mult prea mari in dieta celor mai multi dintre noi. Alimentele procesate, bogate in omega-6 au o incidenta foarte crescuta in randul populatiei atat europene cat si nord americane. Studiile au aratat ca un consum ridicat de alimente bogate in omega-6 in combinatie cu lipsa omega-3 din alimentatie conduc la un risc crescut de boli cardiovasculare, forme de cancer si obezitate, prin procesul inflamator pe care il creeaza in organism.
Aproximativ 70% din compozitia uleiului de floarea soarelui consta in acizi grasi omega-6.
Cu ce il inlocium? In salate folositi uleiul de masline presat la rece iar la prajit sau in mancaruri folositi untul sau uleiul de cocos.
