Cum sa faci un antricot de vita la gratar, suculent, deosebit de gustos, fraged, ce se va topi in gura imediat ce vei incepe sa mananci?

Calitatea si provenienta carnii de vita au o mare importanta.

In primul rand trebuie sa fie vorba despre o bucata adevarata de antricot (entrecôte in franceza si in traducere libera pe romaneste “intre coaste”). Din pacate la noi in Romania cam mai toate tipurile de “friptura” de vita se numesc antricot. De retinut ca toate antricoatele sunt fripturi insa nu toate fripturile sunt antricoate!

In al doilea rand trebuie avuta in vedere provenienta carnii sau mai exact a animalului precum si modul in care a fost crescut sau hranit. Producatorii locali nu au obisnuinta sa treaca pe etichete aceste lucruri insa daca achizitionati bucati de carne impachetate de provenienta straina (de obicei din Australia, Germania etc), pe etichetele respective gasiti mult mai multe informatii, spre exemplu daca animalul a fost hranit cu iarba sau cu cereale, daca este carne ecologica sau nu, daca a fost crescut in aer liber etc.

Antricotul sau rib-eye dupa cum se mai gaseste la noi este o carne frageda si foarte gustoasa datorita faptului ca este marmorata (procentul de grasime trebuie sa fie undeva in jur de 10%). Nu este deloc o carne slaba (de aceea ne si place noua consumatorilor de mancare adevarata!). Firisoarele de grasime ce ii dau aspectul marmorat ii ofera acel surplus de gust specific si fac carnea si mai frageda.

O bucata intreaga de antricot (circa 1-2 kg) se poate gati intreaga, fara a fi feliata si atunci vorbim de un roast beef. Insa cea mai usoara varianta este sa fie gatita la tigaie sau pe gratar, gata feliata. Mai jos va impartasesc cateva sfaturi pentru a obtine un antricot perfect de vita la gratar. Il acompaniati cu ceva salata si cu un sos bearnaise onctuos sau cu unt aromat si aveti reteta perfecta LCHF!

  • Scoateti carnea din pachet si asezati-o intre doua servetele pe o farfurie in frigider, pentru a obtine o suprafata relativ uscata.
  • O felie de antricot trebuie sa fie relativ groasa, de 2 cm si trebuie sa aibe o greutate de 175-200 gr.
  • Gratarul trebuie sa fie incins foarte bine.
  • Cumparati-va un termometru de bucatarie!
  • Scoateti carnea din frigider cu circa 10-15 minute inainte de a o gati, ea trebuie sa fie la temperatura camerei.
  • Sarati si piperati pe ambele parti. Un antricot de vita are o aroma deosebita, un gust specific si dupa parerea mea (si a marii majoritati) nu trebuie “stricat” cu alte condimente gen boia, asa cum se mai obisnuieste in bucataria romaneasca. Incercati doar cu sare si piper si nu veti regreta!
  • Temperatura interna pentru un antricot poate varia intre 55-70 de grade Celsius. Un antricot perfect se serveste medium-rare, adica la o temperatura de aproximativ 58-60 de grade. Exista unii oameni carora le place antricotul in sange, si pentru acestia luati carnea de pe gratar la 55 grade Celsius sau unii care nu au voie sa manance carne in sange sau relativ cruda, precum femeile insarcinate, si atunci acestea ar trebui sa consume carnea la temperatura de 70 grade. Daca nu sunteti femeie insarcinata nu aveti voie sa consumati un antricot bine facut, este un sacrilege! cum ar spune francezul.
  • Puteti intoarce feliile de antricot de cate ori doriti pe o parte sau pe cealalta, este chiar recomandat astfel incat sa nu le ardeti.
  • Daca nu aveti termometru (desi trebuie cumparat, perfectiunea o atingeti prin managementul temperaturii interioare a carnii) lasati carnea pe gratarul incins cate 2-3 minute pe fiecare parte.
  • Lasati antricotul sa se “odihneasca” dupa ce l-ati gatit, nu il serviti direct. Circa 5 minute este suficient.
