Indulcitorii in dieta LCHF

Nu toata lumea iubeste zaharul, mai ales in concentratie prea mare. Insa exista multe persoane care au o relatie speciala cu zaharul. Pentru ele, zaharul nu reprezinta doar energie, ci le rezolva problemele, si aceasta intr-un mod atat de efectiv incat duce la dependenta.

Daca urmati o alimentatie LCHF eliminati zaharul din dieta. Dupa un anumit timp (2-3 saptamani) dispare pofta de dulce si creste sensibilitatea la alimentele care au acest gust. Dulciurile care inainte pareau delicioase acum au un gust mult prea pronuntat, chiar dezgustator. Pur si simplu sunt prea dulci. De bauturile dulci nici nu mai spun, incercati sa beti un pahar de cola dupa, sa spunem, o luna de abstinenta de la zahar si veti constata ca poate fi chiar scarboasa de-a dreptul (mai pe romaneste spus).

Este de asemenea recomandat sa se evite si indulcitorii deoarece persoanele sensibile la gustul de dulce pot intampina probleme in a se abtine de la consumul produselor ce contin zahar. La aceste persoane pofta de dulce poate fi declansata si de catre indulcitori, crescand astfel riscul unei recidive.

Persoanele care urmeaza LCHF in mod liberal nu au motive sa se abtina de la consumul indulcitorilor. Daca dorim insa sa mancam cat mai natural, este de preferat sa renuntam si la acestia.

Bauturile carbogazoase de tip light trebuie excluse total din alimentatie, indiferent daca contin indulcitori naturali (stevia) sau nu.

Exista o serie de deserturi in alimentatia LCHF in care sunt folositi indulcitorii. Acestia sunt:

– stevia. Este un indulcitor natural extras din frunzele plantei Stevia rebaudiana promovat drept o varianta sanatoasa nu numai la zahar ci si la indulcitorii artificiali. Este de 40 ori mai dulce decat zaharul (frunzele) sau de 200-300 de ori mai dulce decat zaharul sub forma de extract de pudra derivat din stevie. Pentru a inlocui 1 lingurita de zahar se foloseste in general un sfert de lingurita de extract de stevia. Citit insa eticheta deoarece depinde de producator. Se comercializeaza sub forma de praf, de picaturi, de cristale etc.

– erythritol. Este un indulcitor natural vegetal de ultima generatie, de fapt un alcool din zahar, cu o putere de indulcire mai mica decat cea a zaharului insa aproape noncaloric. In loc de 1 lingurita de zahar puteti folosi 1 lingurita si jumatate de erytritol. Se gaseste in mod natural in unele fructe si legume precum ciupercile, perele, pepenii etc si in alimente fermentate. Se poate cumpara online sau in magazine de specialitate si poate aparea sub alte denumiri, spre exemplu: Sukrin, Eritritol etc. El consta din carbohidrati ce nu sunt preluati de catre sange, neavand astfel nici un impact asupra insulinei, fiind astfel un preferat al celor ce urmeaza LCHF.

Evitati indulcitorii artificiali care contin unul dintre urmatoarele:
E950 (K-acesulfam) – se foloseste in produse light impreuna cu aspartamul
E951 (aspartamul) – se foloseste in foarte multe alimente de tip “light”. Este un indulcitor artificial foarte controversat, multi sustinand ca poate cauza cancer.
E954 (zaharina) – se foloseste sub forma de tablete pentru indulcirea ceaiului sau a cafelei
E955 (sucraloza) – este un indulcitor derivat din zahar insa o parte a moleculei acestuia este inlocuita de clor. Studii recente au demostrat ca este daunatoare pentru sanatate si trebuie evitata in totalitate.
