Cum folosim uleiul de cocos la gatit?

Uleiul de cocos este foarte sanatos si a cunoscut o popularitate foarte mare in ultimul timp chiar si in Romania, tara in care toti folosim uleiul de floarea soarelui la gatit. Popularitatea sa se datoreaza in primul rand trendului international si incercarii de a urma un stil de viata cat mai sanatos, stil de viata promovat nu in ultimul rand de miscarea raw vegana, a dietelor populare low carb, inclusiv LCHF sau cu indice glicemic scazut.

Uleiul de cocos este folosit la gatit de sute de ani in tarile de pe coasta Asiei, in special in sudul Indiei si in Filipine.

Avantajul uleiului de cocos este ca este alcatuit din acizi grasi cu lant mediu (acid lauric) ce sunt arsi mult mai repede in corp decat acizii grasi cu lant lung, ce se gasesc spre exemplu in unt. Repartitia acestor acizi grasi este unica pentru uleiul de cocos si face ca acesta sa nu fie stocat in organism sub forma de grasimi ci este transformat direct in energie pentru celule.

Cum includem uleiul de cocos in dieta noastra si mai ales cum il folosim la gatit?

La prajit
Uleiul de cocos este o alternativa foarte buna la uleiurile traditionale (uleiul de floarea soarelui, de rapita, de masline etc) cand vine vorba de prajit deoarece se comporta foarte bine la temperaturi inalte. Cel mai sanatos ulei de cocos si cel mai indicat pentru gatit este cel obtinut prin presarea la rece (daca este ecologic, cu atat mai bine). El vine in mai multe variante: cu gust si miros discret de cocos sau fara gust/miros, neutre, iar la prajit puteti folosi oricare dintre ele, in functie de ce rezultat vreti sa obtineti.

Legumele la tigaie prajite in putin ulei de cocos cu gust discret sunt mai delicioase (in opinia mea): pastai, mazare, cartofi dulci, pak choi, varza chinezeasca, brocolli, conopida. Clatitele LCHF prajite in ulei de cocos cu gust sunt mult mai parfumate si mai gustoase. Experimentati!

Uleiurile de cocos cu gust neutru (fara gust sau miros de cocos) sunt tratate cu vapori de apa ce indeparteaza aroma de cocos si ii confera o aroma neutra (prin procesul numit deodorizare sau distilare). Datorita gustului sau neutru, acest tip de ulei de cocos se preteaza la gatitul prin prajire atunci cand dorim sa evidentiem alte arome sau condimente ale felului de mancare decat cel de cocos. Uleiul cu gust neutru tolereaza temperaturi ridicate de 200 grade Celsius, de aceea este cel mai recomandat pentru prajire sau copt.

La copt
Daca vreti sa coaceti in alimentatia LCHF (cu faina de migdale, faina de cocos, alune, nuci si seminte etc) incercati sa inlocuiti untul sau uleiul vegetal cu ulei de cocos. Nu numai ca este foarte sanatos, ci este si perfect pentru persoanele intolerante la lactoza.

In cafea sau ceai
Puteti obtine o cafea delicioasa, asemanatoare cu cafeaua cu lapte sau un frappe delicios daca adaugati 1-2 linguri de ulei de cocos si mixati cu un blender. Aici eu prefer uleiul de cocos cu aroma, este mult mai bun. adaugati cateva cuburi de gheata si obtineti o icecoffee!

In smoothie-uri
Orice tip de smoothie LCHF poate fi “imbunatatit” daca ii adaugati o lingurita de ulei de cocos.

La cuptor
Folositi uleiul de cocos la fel ca orice alt ulei vegetal. Puteti face, spre exemplu, cartofi dulci sub forma de chips-uri: taiati feliute subtiri, stropiti-le cu ulei si dati-le la cuptor pana devin usor maronii. Ori orice alt tip de legume la cuptor: ardei copti, dovlecei, ceapa taiata sferturi etc.
