Condimente pentru gratar

A inceput sezonul gratarelor, si servite cu salate, sosuri sau unt aromat sunt felul de mancare preferat al multor persoane ce urmeaza o alimentatie LCHF. Insa ce condimente folosim pentru a da gust carnii? O carne de o calitate foarte buna nu are nevoie decat de sare si piper. Insa daca dorim alte combinatii?

Amestecul de condimente pentru gratar cumparat din comert contine, in general, o cantitate inutila de zahar. De ce adauga producatorii zahar este un mister pentru mine. Daca e datorita proprietatii de potentiator de gust, stim cu totii foarte bine ca este o incercare desarta. Cati dintre noi, cand pregatim carnea pentru gratar, pe langa sare piper si boia mai adaugam si 1-2 linguri de zahar?

Un alt potentiator de aroma indragit de catre producatori insa complet inutil pentru sanatatea noastra este glutamatul (monoglutamat de sodiu, glutamatul de monosodiu, E621 etc… si acesta are multe denumiri, la fel ca si zaharul).

Suntem cu toti constienti ca trebuie sa reducem nu numai produsele ce contin zahar in mod evident din alimentatie, ci si zaharul ascuns precum si aditivii alimentari. De aceea va propun un amestec de condimente de baza pentru gratare, fara zahar sau E-uri sau alte minuni.

Condimentele pot fi pastrate intr-un borcan sau cutie inchisa ermetic si rezista pana la 6 luni de zile.

Folosirea acestui amestec de condimente: mirodenii, ierburi uscate si sare confera aroma fripturilor la gratar, insa nu fragezesc carnea. Daca doriti fragezirea carnurilor este recomandata marinarea.

Reteta de baza
Ingrediente
2 lg piper macinat
2 lg sare
2 lgt pudra de usturoi
2 lgt pudra de ceapa
1 lgt pudra cayenne (chili)
2 lg boia de ardei
2 lgt cimbru uscat
2 lgt chimion macinat
2 lgt oregano uscat

Pentru carnea de pui adaugati
2 lgt rozmarin uscat

Pentru amestec asiatic adaugati
2 lgt curry
2 lgt chimion
2 lgt coriandru uscat/macinat

Mod de preparare
Amestecati toate ingredientele. Pastrati amestecul intr-un borcan sau cutie inchisa ermetic.
