copanele de pui fricassee cu pancetta si ciuperci champignon

Fricassée de pui este o reteta cu iz rustic frantuzeasca, deosebit de populara. Exista mai multe varianta, una dintre ele, cea cu smantana, fiind deosebit de asemanatoare ciulamalei romanesti. Eu va voi prezenta o varianta fara smantana ce se preteaza si alimentatiei paleo.

Ingrediente 4 portii
8 buc copanele de pui
150 gr pancetta/kaizer sau bacon afumat
250 gr ciuperci
o mana mare patrunjel
3 crengute de rozmarin
3 crengute de cimbru
4 catei de usturoi
400 ml supa de pui
ulei de masline
sare si piper

Mod de preparare
Tocati rozmarinul si cimbrul marunt. Curatati si striviti cateii de usturoi. Taiati pancetta feliute mici, spalati si taiati ciupercile in jumatate daca sunt micute sau in sferturi daca sunt mai mari. Stergeti copanelele de pui cu un servetel, sarati-le si piperati-le.
Intr-o tigaie adanca puneti ulei de masline la prajit. Adaugati copanelele si rumeniti-le, cu pielea in jos pana ce prind culoare, aproximativ 3-4 minute. Intoarceti copanelele, adaugati pancetta, ciupercile si usturoiul. Adaugati cimbrul si rozmarinul tocate si amestecati usor. Lasati cateva minute pe foc pana ce pancetta incepe sa se rumeneasca si ea. Adaugati supa de pui si dati in clocot. Dati focul mic si lasat sa bolborosesca totul, fara capac circa 10 minute. Amestecati din cand in cand usor. Acoperiti cu un capac si lasati pe foc inca 20 de minute, pana ce puiul este complet gatit.
Scoateti copanelele, pancetta, ciupercile cu o sita si puneti-le pe un platou adanc. Dati focul mare si reduceti lichidul ramas in oala, pana ce obtineti un sos matasos. Turnati sosul peste pui, presarati patrunjel tocat si serviti cu pofta!

Supa de pui este de preferat sa o faceti dinainte insa puteti folosi si supa concentrata cu apa sau cuburi Knorr, cititi instructiunile pentru a obtine 400 ml de lichid.
