Un muschi de vita file, bine gatit, este probabil una dintre cele mai delicioase si decadente feluri de mancare care exista.

Ingrediente
file (muschi) de vita
1 manunchi de sparanghel verde
unt pentru prajit
sare, piper proaspat macinat

Mod de preparare
Scoateti carnea din frigider din timp (cel putin 1 ora inainte) si lasati-o sa ajunga la temperatura camerei. Sarati si piperati chiar inainte de a o gati.

Incingeti tigaia si adaugati untul la topit. Adaugati file-urile de vita si prajiti-le pe ambele parti pentru cateva minute. Stropiti-le cu o lingura cu untul din tigaie in timp ce le gatiti. File-ul (muschiul) de vita este o materie prima exclusiva si este important sa fie tratat cum trebuie ca sa nu fie prajit prea tare astfel incat carnea sa ramana frageda si suculenta. Este bine sa folositi, daca aveti, un termometru de bucatarie.

Daca doriti ca muschiul sa fie “rare”, in sange, atunci temperatura se ridica la 50-55 grade Celsius. Daca nu aveti termometru puteti sa va ghidati dupa momentul in care sucurile din carne incep sa iasa la suprafata.

Daca doriti ca muchiul sa fie “medium”, de o culoare roz la interior, atunci temperatura este de 60-65 grade Celsius, iar sucurile au iesit la suprafata din abundenta.

Dupa ce carnea este gata, lasati-o sa se “odihneasca” pe un fund de lemn inainte de a o servi, astfel incat sucurile sa aibe timp sa se disperseze uniform in bucata de carne si sa nu sangereze atunci cand o taiati cu cutitul.

Firele de sparanghel se spala si li se indeparteaza tija lemnoasa. Se prajesc in tigaie in putin unt, cu sare si piper, cam 4-5 minute, pana isi schimba culoarea intr-un verde-crud. Ele rebuie sa fie putin crocante, iar daca le lasati mai mult se vor inmuia si vor capata o culoare spre maroniu.

Toata aceasta nebunie se poate servi cu sos bearnaise, cu un sos de vin rosu sau orice alt tip de sos potrivit pentru muschiul de vita.
